Flour, water, salt and time

A 36-hour sourdough

A 36-hour sourdough

Our sourdough rises for a day and a half before it meets the oven. Everything else โ€” the croissants, the rusks, the Saturday koeksisters โ€” is made by hand in the room behind the counter and sold the same day.

What comes out of the oven
